Once Upon a Chef
Originally from Mexico City yet raised in Tabasco state, Aquiles Chávez is a Mexican Chef, owner of La Fisheria, a Latin American TV personality, author of many books and spokesperson of the Association of Mexican Avocados Producers. The chef with the biggest mustache on TV, has an outstanding personality; he entertains us with his recipes and fantastic hosting skills. A funny, confident and gregarious chef! His main tagline about his career is: “I like people to see me on TV, I like having a good time and cooking for me is an act of love”.
He went to France to learn classic French dishes and traditional techniques then came back to Mexico to mix those French recipes with Mexican ingredients and aromas. With this medley, his plates leave a surprising and one of a kind sense of charm in everyone! This chef’s creativity has just no limits!

With sharp eyes for details and an attitude of perfection, Chef Aquiles will be a mentor in our cuisines. From welcoming approach, serving techniques, ingredients choosing methods to elegant plate arrangements, our staff will discover a training program that enlightens the magic of hospitality within them. The Chef will audit operational processes by monitoring practices and giving advices to promote quality and guide Mexity towards excellence. That’s an upgrade package with a “Toque Blanche” that will make your visit to Mexity feel as if you’re dining on the white sands of Isla Contoy!
But the fun is not over yet! Chef Aquiles will be your dining companion from December 22 till January 6. With his fascinating skills and the help of our team, you will taste distinctive and authentic Latin dishes! MEXITY will be honored to have such a talented chef for 16 days during the holidays. Each night from 7:00 till 10:00 pm a unique event will be held; from live cooking shows to free cooking lessons, the chef will make you eager for more! He will also be holding presentations while distributing recipes to teach you on “eating right”.
